One dish keeps popping up again and again: pão de queijo (Brazilian cheese bread). And it’s not because it’s trendy. It’s because it’s delicious, deeply cultural, and deceptively simple in a way that surprises everyone who tries it.

Pão de queijo isn’t dessert and it isn’t reserved for special occasions.

In Brazil, it’s everyday food.

It’s the warm, cheesy bites you grab from a corner bakery before work.
It’s the smell that drifts through the neighborhood when someone bakes a fresh batch.
It’s the thing you eat with coffee, or as an easy snack between meals.
It’s familiar, local, simple.

Because cassava (mandioca or aipim in Brazil) grows widely and abundantly, pão de queijo has always been a locally sourced, accessible food that feeds families without fancy ingredients or fuss.

You will need: Tapioca flour

Tapioca flour is made by extracting only the starch from cassava, then drying it into a very fine, white powder. It’s lighter, stretchier, and more elastic than cassava flour.
