Hi Friends Reader If you've been around Garden in the Kitchen for a while, you may remember this recipe. My Chicken Zucchini Skillet first appeared on the blog back in 2017, and every summer since then I've found myself making it again when the zucchini starts taking over the garden. Back then, the recipe was all about being "low carb." Today, my cooking looks a little different. These days, I'm much more focused on simple meals made with seasonal ingredients, letting fresh produce shine, and creating dinners that are nourishing without being complicated. So I decided it was time to give this longtime favorite a complete refresh.
It's still the same easy skillet dinner I love, made with chicken, garden zucchini, tomatoes, garlic, lemon, and herbs but now it better reflects the way I cook today.
