My favorite way to make dinner all summer long

One of my favorite things about summer cooking is that dinner doesn't have to be complicated (haven't I said this before?!)

When the weather is beautiful, the last thing I want is to spend hours in the kitchen or deal with a sink full of dishes. That's exactly why foil packet dinners have become one of my favorite ways to cook this time of year. They're simple to prepare, practically cook themselves, and let fresh seasonal ingredients shine.

My newest recipe is officially live!

These foil packets are filled with juicy shrimp, sweet corn, asparagus, and red bell peppers, all finished with butter, Old Bay seasoning, paprika, and fresh lemon.

👉🏻 One of my favorite little cooking hacks in this recipe is melting the butter first and briefly blooming the seasonings before pouring everything over the shrimp and vegetables. It takes less than a minute, but it creates a fragrant butter sauce that coats every bite.

Whether you bake them in the oven or cook them on the grill, dinner is ready in about 20 minutes.
