Hi Friends Reader I grow zucchini in my garden every year, and it’s always one of those vegetables that just keeps on giving. Once it starts coming in, I find myself looking for new ways to use it and these are some of the recipes I come back to again and again. You can bake it, sauté it, turn it into dinner, or even dessert… it really does it all. So today I’m sharing an updated version of one of my favorites! This baked zucchini casserole is the kind of dish that makes zucchini feel a little more special—simple ingredients, baked together into something comforting, flavorful, and perfect for busy weeknights.
