I grow zucchini in my garden every year, and it’s always one of those vegetables that just keeps on giving. Once it starts coming in, I find myself looking for new ways to use it and these are some of the recipes I come back to again and again.

You can bake it, sauté it, turn it into dinner, or even dessert… it really does it all.

So today I’m sharing an updated version of one of my favorites!

This baked zucchini casserole is the kind of dish that makes zucchini feel a little more special—simple ingredients, baked together into something comforting, flavorful, and perfect for busy weeknights.

But if you’ve got extra zucchini on hand (and somehow we always do), here are a few more ways I love using it:

Pan Sautéed Zucchini and Mushrooms
Quick, simple, and perfect as a side for just about anything.

Air Fryer Zucchini Fries
Crispy, snackable, and one of my favorite ways to use zucchini.

Low Carb Zucchini Lasagna
A great way to turn zucchini into a full, satisfying dinner.

Double Chocolate Zucchini Muffins
You’d never guess there’s zucchini in these.

Another favorite—moist, rich, and a great way to use up extra zucchini.

That’s what I love most about zucchini, it adapts to whatever you need. Something quick. Something cozy. Something sweet. It’s always a good place to start.
